Ayam Taliwang

The most famous dish associated with Lombok, Ayam Taliwang is a small, flattened half-chicken marinated in a fiery blend of red chillies, shrimp paste, garlic, shallots, tomatoes, and coconut oil, then grilled over charcoal. The result is simultaneously crispy-skinned and juicy, intensely spiced but deeply flavourful. Traditional versions are genuinely hot — this is not decorative spice. Ayam Taliwang originated in Karang Taliwang, a village now absorbed into Mataram, and the small restaurants here are still considered the authentic source.

Plecing Kangkung

The essential companion to Ayam Taliwang, Plecing Kangkung consists of blanched water spinach (kangkung) dressed with a vibrant, raw sambal made from red chillies, shrimp paste, lime, salt, and fresh tomatoes. The combination of the cooling, slightly crunchy spinach with the bright, raw sambal is brilliant. Almost every Sasak restaurant serves this dish, and it appears on tables uninstructed in the way bread appears in French restaurants.

Sate Rembiga

Better known outside Lombok as sate pusut, Sate Rembiga is a unique form of satay where spiced minced meat (beef, chicken, or pork) is pressed around thick lemongrass stalks or bamboo skewers rather than threaded as cubes. The seasoning is complex — including galangal, turmeric, kaffir lime leaves, and fresh coconut — and the result is aromatic and rich. The texture is different from conventional satay — denser and more spiced throughout.

Beberuk Terong

A Lombok salad of tender roasted eggplant and long beans dressed with chilli, shallots, and lime. Often served cold, it provides a wonderful textural and flavour contrast to the richness of grilled meats. The smokiness of the roasted eggplant combined with the bright chilli dressing makes it highly addictive.

Nasi Balap Puyung

Lombok's iconic street food, Nasi Balap Puyung consists of rice topped with shredded spicy chicken (ayam), crispy fried soybeans (kedelai goreng), and stir-fried vegetables. Named after Puyung village in Central Lombok where it originated, this dish is available at roadside stalls across the island from dawn onward and costs very little. It's the Lombok equivalent of Bali's nasi campur — a complete meal in a single generous serving.

Cerorot and Jaje Tujak

Lombok's traditional sweets deserve attention. Cerorot are small cones of sweetened rice flour and palm sugar wrapped in coconut leaves. Jaje Tujak is a traditional cake made from pounded glutinous rice mixed with grated coconut and palm sugar, with a dense, chewy texture and deep caramel sweetness. Lombok Night Market (Pasar Malam): Operating from around 5 PM, the night market near Mataram is an excellent place to try multiple Sasak dishes at very low prices.

Kuta Lombok

Kuta's warung scene has grown significantly. Look for places serving nasi campur with multiple Sasak preparations — the variety of small dishes alongside rice allows you to try multiple flavours in one meal.

Beach Warungs Everywhere

Across Lombok's coast, simple warungs serving fresh-grilled fish (ikan bakar) deserve special mention. The fish is often caught that morning and prepared simply with sambal and steamed rice. This is some of Indonesia's best value and most satisfying eating.

Chilli Warning

Lombok's food is genuinely spicy. If you have a low chilli tolerance, always specify 'tidak pedas' (not spicy) when ordering. Most restaurants are happy to adjust heat levels for foreign guests, though traditional Sasak cooks consider very spicy to be the correct version.
